Instant Lemon/Lime pickle
Lemon/lime pickles can be prepared in different ways and each one has its own unique taste.
While the traditional way of preparing by cutting, mixing with salt, and drying followed by adding the spices and salt might have a long shelf life, there is no denying that the instant pickle has its own unique taste and juicy texture. It may not have a long shelf life but it is not intended for long-term use. It is usually prepared for consumption on the same day and consumed within a few days.
Take large-sized lemon chop into small pieces and boil in a pan by closing the lid. Add a few green chilies, half of cup of water salt to taste, and turmeric powder. After a few minutes when the skin became soft, added red chili powder to taste, asafoetida, mix well, and switch off. Heat oil and add mustard seeds to crackle and add it and mix well.
This tastes awesome with curd rice and also for other dishes including rotis, Pongal, and Upmas.
Could not think of anything simpler than this.
